From the Kitchen of Janet Cuddigan
It’s summer and it’s hot. But here’s a refreshing way to cool off—lemonade combined with fresh pineapple. It’s easy to make and even easier to sip on the patio, at the beach, or at your kids’ sports events.
Ingredients:
- 1 fresh pineapple
- 4 cups water, divided
- ½ cup freshly squeezed lemon juice
- 1 packet sweetener of your choice, or to taste
- 2 cups ice cubes
Directions:
Core your pineapple. Cut into chunks and measure out 2 cups. Save any pineapple juice. Combine 2 cups of pineapple chunks, saved pineapple juice, 2 cups water, and lemon juice in a blender. Blend until smooth and pour into a pitcher. Add the remaining 2 cups of water and sweetener to the pitcher. Stir and serve over ice.
